π The Dish: Spicy Pumpkin Velouté
Here is the recipe for a delicious pumpkin velouté:
Ingredients:
- 1 pumpkin (about 1 kg)
- 1 onion
- 2 garlic cloves
- 1 liter vegetable stock
- 200 ml fresh cream
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Olive oil
- Roasted hazelnuts (for garnish)
- A few drops of truffle oil (optional)
Instructions :
- Preparing the pumpkin Cut the pumpkin in half, remove the seeds and peel. Cut into cubes.
- Sautéed herbs In a large saucepan, heat a little olive oil. Add the minced onion and chopped garlic, then sauté until translucent.
- Cooking pumpkin Add the pumpkin cubes and sauté for a few minutes. Add the vegetable stock, cinnamon, nutmeg and ginger. Bring to the boil, then reduce the heat and simmer for about 20 minutes, until the pumpkin is tender.
- Mixing Use an immersion blender to reduce the soup to a velouté. Add the crème fraîche and blend again to obtain a smooth texture. Add salt and pepper to taste.
- Trim Serve the velouté in bowls, garnish with roasted hazelnuts and add a few drops of truffle oil for a luxurious touch.
