Born on the edges of Lake Geneva, Chasselas has kept its former denomination of Fendant in Valais. It gets its denomination from the fact that its grapes split under finger pressure. Arriving in the canton in the XIXth century, the Fendant turned into the region’s main harvest after reconstruction of the vineyard which followed on from the crisis caused by the arrival of the Pylloxera virus.
Slow and gentle pressing followed by cold alcoholic fermentation and several months of tank aging (during which malolactic fermentation occurs) are practiced to guarantee optimal body and roundness while preserving the wine’s fresh and delicate aromas.
Discrete, it gives up distinct lime blossom and honey aromas intermixed with white flower notes.
A classy and unctuous structure that offers a smooth and round mouthfeel from start to finish.
Fendant is traditionally served with Swiss specialties such as fondue or raclette. It will also work as a sipper or with fish and seafood.
