Formerly known as Rouge du Pays, Cornalin is mentioned in 1313 in a notarial deed from the register of Anniviers. A native grape variety that is difficult to work with in the vineyard due to its magnesium deficiency, it almost disappeared from the Valais in the 20th century. Since the early 2000s, its intrinsic qualities have brought it back into the limelight, making it one of Valais's winegrowing icons.
Slow maceration over 4 weeks gently extracts the color and tannins responsible for the structure of our Cornalin. Several months' ageing in vats, during which the second fermentation takes place, concludes the elaboration of this specialty.
