In Valais, our Maître de Chais, trained over the years like a fine wine, has chosen to create a blend of red grape varieties that give it structure, power and fruit.
In Madagascar, the Maître Chocolatier has chosen the Criollo white bean, the rarest in the world: fruity and tangy, it is exceptional. Five hundred small-scale producers, whose know-how is supported by fair payment, cultivate it on their land without the use of chemicals.
Once across the seas, the beans are roasted, followed by two months of sublimation to extract the quintessential aromas.
