Born on the shores of Lake Geneva in the late 18th century, Chasselas has been Switzerland's most popular grape variety for generations.
Winemaking favors purity and the expression of the terroir. The grapes undergo slow and gentle pressing to preserve the fruit's finesse. Fermentation takes place at low temperatures, a maximum of 18°C, to retain the wine's natural aromas. Indigenous yeasts, specific to the grape and terroir, are used for winemaking. The wine is then aged for several months in vats to refine its structure and balance. A partial malolactic fermentation is carried out to add roundness and harmony.
