Our Dôle was first discovered in Switzerland in 1820 by the famous Franco-Swiss botanist Augustin Pyramus de Candolle. The first Dôle plants arrived in Valais around 1850, in the family vineyard of a military commander exiled in the Jura region. The name Dôle later came to designate a blend of Pinot noir and Gamay, and became the emblematic wine of the Valais and Switzerland's red wines.Dôle grand Cru ville de Sion has very high cultural standards in terms of ecological performance and exposed leaf area per kilo of grapes produced. Before bottling, Dôle Grand Cru Ville de Sion is tasted by the tasting commission appointed by the Grand Cru Ville de Sion commission, to ensure that it meets the highest quality standards.
Slow maceration over three weeks gently extracts the tannins responsible for the color and structure of this red wine. A 9-month ageing period in vats, during which the second fermentation takes place, concludes the elaboration of this specialty.
The intense bouquet develops notes of spice, red fruit and leather.
A full-bodied, fleshy wine with smooth, mellow tannins that give off a beautiful aromatic expression.
