Traditionally a blend of Pinot Noir and Gamay, Dôle can now be complemented by other red grape varieties at 15%. This new legislation gives oenologists a great deal of freedom, and explains the diversity of Dôles produced in Valais.

Winemaking

A slow maceration lasting three to four weeks gently extracts the tannins responsible for the color and structure of this red wine. A six-month ageing in vats, during which the second fermentation takes place, concludes the elaboration of this specialty.

Dress

Intense with ruby red and black nuances.

Nose

The intense bouquet develops spicy, red fruit and leather notes.

Mouth

A full-bodied, fleshy wine with mellow, well-coated tannins and a lovely aromatic expression.

Gastronomic pairings

Ideal with red meats, game, poultry, cheeses and fondue bourguignonne.
