Ballerina

Sweet wines, characterized by their volume on the palate, their smoothness and the complexity of their aromas, require special climatic conditions that only a few Valais terroirs can provide. In favorable years, the presence of Botrytis, a fungus also known as noble rot, can transform excellence into the extraordinary. A great sweet wine that blends the best grapes from parcels of Muscat, Sauvignon Blanc and Hermitage.

Winemaking

Slow, gentle pressing and a single, low-temperature fermentation ensure maximum body and roundness, while preserving the finesse and freshness of the aromas. The sugar content of winter-harvested grapes is such that fermentation of the sugars into alcohol stops by itself when 60-80 grams of residual sugar remain. 13.6% Vol.

Nose

The sumptuously complex, fresh bouquet is characterized by notes of pear, citrus, honey and candied fruit.

Mouth

This sweet wine is characterized by a velvety structure blending acidity and sweetness, full and complex, fleshy and coated. It finishes with aromas of apricot, peach and white fruit.
